BREAKFAST – BRUNCH RECIPES – ALL AROUND FAVORITES

These hot breakfast / brunch recipes will wow your visitors each time. The cheese grits are creamy and rich and operate well with bacon, ham or sausage. The date nut bread may be served alone or with a complete breakfast / brunch. Drink it toasted and buttered with coffee, tea or juice.

Brunch Cheese Grits

3 cups boiling salted water
3/4 cup quick cooking grits
1/3 cup margarine or butter, softened
1/2 pounds. sharp cheddar cheese, grated
1/8 tsp. Tabasco sauce
1 tablespoon. Onion, finely grated (optional)
two eggs, beaten
1/2 tsp. Worcestershire sauce
1/2 tsp. Every; garlic salt, paprika and onion salt

Stir the grits to the boiling water and cook for 3 minutes. Remove from the heat and blend in the remaining ingredients; mix nicely. Pour the batter into a 2 quart greased casserole dish. Bake, uncovered, at 250 degrees for 55 to 60 minutes, or until a silver knife or cake tester inserted into the centre comes out clean. Serve hot. For more information click roastandtoastouray.com

Date Nut Bread

3 eggs
3/4 cup vegetable oil
1 8 oz package dates, chopped
1 cup warm water
1 cup chopped nuts
2 cups plain flour
2 cups sugar
2 tsp. Baking powder
1 teaspoon. Ground cloves
1 teaspoon. ground allspice
1 tsp. cinnamon

Allow the dates soak in the warm water. Meanwhile, beat the eggs and add the sugar and the oil. Stir in the dry ingredients and blend gently. Add the nuts and the dates in their soaking water and mix simply to combine. Pour the batter into a greased and lined loaf pan. Bake at 325 degrees for 1 houror until a toothpick inserted into the centre comes out clean.
